Farina '00'

I found it!!!! Ever since my first cooking trip to Italy in 2000 I have been looking for '00' flour. Every handwritten recipe I have for pasta and pizza crust from that trip uses it, and I have only been able to find it online UNTIL NOW! I must thank my client Denise's husband Fritz for the tip on where to get  this because the bags are so small and hidden on the shelf I'm not sure I would have ever seen it on my own.

For those of you unfamiliar with the magic that is 00 flour, it is basically white all purpose flour. You can substitute it directly in recipes for AP flour. However 00 flour is super fine and results in incredibly smooth and delicate doughs. I especially love it in fresh pasta. The resulting pasta dough is as smooth and delicate as a baby's butt. It's a truly beautiful thing.

Thank you, Caputo's in Addison, for being such an awesome Italian grocery store. I sing your praises for many reasons, and now I add this to the list.

For those of you who do not live near Caputos or another equally awesome Italian grocer, you can order 00 flour on Amazon.com or from markethallfoods.com. I just hate paying shipping if I don't have to.
